Paolini converted two break points in each set and saved both break points she faced, according to Eurosport.
The victory marks Paolini's return to a Grand Slam round of 16 for the first time since the 2025 Roland Garros, following an injury in Paris.
She had withdrawn from the doubles tournament, where she was scheduled to partner Sara Errani, ahead of her singles success.
"The last few months have been quite tough. I am very happy with how I was on court and how I played today.
It's always tough to face Maria Sakkari; last time in Doha I lost," Paolini said.

"Today I enjoyed myself on court. It's beautiful when you feel like that.
Thanks also to the crowd, there are many Italians. It was a great day, I am satisfied."
"This year has been a roller coaster. In Paris I got injured, I recovered and came here without expectations.
Health is always the most important thing."
"I am happy to have played three good matches here. I hope to play another good match," she added.
